Melissa Reznar is in a dramatic minority amongst Americans — she identifies with a group that represents about 1.4 percent of the U.S. population, she said.
And it’s all because of what she eats. Reznar, a human nutrition doctoral student, is a vegan.
Reznar and her husband, Jason Reznar, decided to become vegetarians eight years ago. After four years of a meatless diet they became vegans and haven’t looked back since.
Reznar decided to become a vegetarian after getting involved with and conducting research on some animal rights groups across the country. After getting some more information, she said she knew she had to go vegan.
Although many nonvegans criticize the vegan diet for not getting enough of certain nutrients — particularly protein — Reznar said she doesn’t have any problem and actually eats healthier than most.
“I try to eat a variety of different foods (and) experiment with new foods so I don’t get bored, and I haven’t yet,” she said, “And really I don’t miss anything by just living with those principles.”
