These Lombardi Mint Brownies, Glendale Red Hot Salsa with tortilla chips and Bill Belichick Bacon Puffs are all quick and easy items to prepare for your Super Bowl party.

Bill Belichick Bacon Puffs

Ever wonder why Bill Belichick wears those baggy, gray sweatshirts all the time? Maybe to hide his bacon gut.

To honor coach and his belly, cook these Bill Belichick bacon puffs as easy and delicious finger food.

Ingredients

12 slices of bacon

8 slices of bread

2 cups of shredded cheddar cheese

To prepare

Cut the crust off the bread slices and cut each slice in half.

Place two bread halves, end to end, on one slice of bacon.

Sprinkle about three tablespoons of shredded cheddar on bread.

Roll up bread and bacon and hold in place with toothpick.

Place each roll on its side in a baking pan and place in oven.

Bake at 400 degrees for 20 minutes or until rolls are browned.

Serve hot and enjoy.

Glendale Red Hot Salsa

It’s red hot in Glendale, Ariz., the site of Super Bowl XLII.

Ingredients

1 large can stewed tomatoes

1 small can chopped green chilies

1 small onion, chopped

1 teaspoon garlic

1 teaspoon cumin

1 tablespoon Tabasco

To prepare

Mix above ingredients and let set in refrigerator for one hour or until flavors are blended.

Remove from refrigerator and add salt and pepper.

Serve with tortilla chips.

Lombardi Mint Brownies

Celebrate the winning team by eating a dessert in honor of the Lombardi Trophy. Stay with something as legendary as Lombardi himself — brownies.

Ingredients

2 boxes of chocolate chunk brownie mix

1 column of chocolate-covered mint cookies

Water (as directed by brownie mix)

Oil (as directed by brownie mix)

Eggs (as directed by brownie mix)

To prepare

Crush mint cookies.

Follow directions as listed on brownie mix package.

Before cooking, add crushed cookies.

Bake as directed on brownie mix package.

Serve warm, with milk, in the fourth quarter.
