They see me rolling…

Hard work and dedication are what Sansu Sushi and Cocktails thrives on, its owners said. Although head chef Barry Jung has perfected his skills for the past 14 years working at five different sushi restaurants, he claims to like the environment at Sansu, 4750 S. Hagadorn Road, the best.

“I like it when the customers and patrons can have my food; I’m very proud,” Jung said.

Jung said he creates a new type of roll about once a month.

“Whenever I think about something, I create it,” he said.

One of the most recent creations was his “scavocado roll,” which includes spicy tuna, crab salad and cucumber on the inside. It is topped with avocado, spicy scallops and tobiko.

Jung said his favorite roll to create and eat is the “fusion roll,” which includes spicy tuna, avocado and tempura batter.

“When making the sushi, I think of the presentation, quality and consistency,” Jung said.
