Students willing to travel for dining at The Gallery

The aroma of sauces and spices emanating from the oriental dish chef Keric Fritzsching prepared Monday floated out into the hallways of Snyder Hall.

Fritzsching stirred a mixture of shaved prime rib, snow peas, mandarin orange flavoring and several seasonings into a pan that he swayed across the stove flames every few seconds.

If all of the dishes taste like this stir fry, the Snyder-Phillips Halls’ cafeteria, or The Gallery, could put P.F. Chang’s China Bistro and Rice Kitchen out of business.

The Gallery is a newly renovated and expanded cafeteria located between the two halls. It attracts more than 2,000 students daily and has several stations including Ciao!, Latitudes, New Traditions, Brimstone Grille and Bliss.

Latitudes serves international foods that vary each day, and the mandarin flavoring and sugar on this oriental dish gave it a sweet taste. However, the mandarin didn’t mix well with the garlic seasonings.

But, Fritzsching then mixed the stir fry with a fried rice that was incomparable.

Kurt A. Kwiatkowski, dining services manager at The Gallery, said his cooks prepare the fried rice in an industrial wok – a large black pot that resembles the shape of a punch bowl.

Fritzsching, 28, of East Lansing, said he’s cooked all of his life and finds that working at The Gallery gives him a chance to educate the student employees on his cooking techniques and secrets.

The cafeteria seems to b a hit with students. Megan Dwyer was astonished when she entered the cafeteria last week.

The American studies junior said she couldn’t help but gaze at the contemporary windows and lighting fixtures, and chefs flipping burgers and stirring pastas.

“There were so many students (in the cafeteria),” Dwyer said. “I saw kids from all over campus.”

Take James Adams, who travels from Butterfield Hall to Snyder-Phillips halls every day for a bite to eat.

The no-preference sophomore said the certified Angus burger served at Brimstone Grille keeps him coming back.

“It all reminds me of an upscale food court,” he said.

All in all, The Gallery makes student meal plans worth every cent and with hours that extend to midnight, it’s a great way to avoid take-out and ramen noodles.
