On a budget: The best combination of breakfast and lunch

November 3, 2011

Staff reporter Brooks Laimbeer makes barbeque sauce from scratch to
put on his breakfast sandwich.

When sitting down to eat for a classic family brunch, it can be difficult to decide what exactly to eat. You no longer are in the mood for that stack of pancakes, but it is not quite time for that scrumptious sandwich.

Rather than siding with breakfast or lunch, make a meal that epitomizes the combination that is brunch — a breakfast bagel barbecue sandwich.

This dish — which includes a bagel, cheese, eggs, barbecue sauce and ham — easily can solve your indecision, while at the same time save you money.

This breakfast bagel sandwich is fresh, simple and inexpensive to make, as long as you carefully purchase the ingredients from any standard grocery store.

I purchased my ingredients at Kroger, 4884 Marsh Road, in Okemos. I prefer this store because if you own a Kroger Plus Shopper’s Card, you are entitled to the discounts the store gives for the food products they sell. You also can shop at Walmart, 5110 Times Square Place, in Okemos, and Meijer, 2055 W. Grand River Ave., in Okemos.

Although my total might seem high, most students already have many of these ingredients — such as ketchup, salt, eggs and cheese — in their kitchens, making the cost of the meal even less.

Barbecue sauce

Ingredients:

Half-cup of ketchup ($2.89)
2 tablespoons of brown sugar ($2.69)
2 tablespoons of Worcestershire sauce ($1.39)
1 tablespoon of cider vinegar ($1.06)
1 dash of hot pepper sauce ($1.39)
1 teaspoon of garlic powder ($1.00)
One-quarter teaspoon of ground mustard ($2.79)One-fourth teaspoon of salt
My total for the sauce: $13.21

Directions:

1. Combine all of the ingredients in a bowl and stir them together
2. Add the mixture to a sauce pan and place on a stove set to medium heat
3. Warm the sauce for about five minutes
4. Remove from heat, let cool and serve After making the sauce for your sandwich, it is time to assemble the main course.

Bagel sandwich

Ingredients:

3 eggs ($1.79 for a dozen)
Sliced American cheese ($3.59)
Sliced deli Ham ($4.19 for 9 ounces)
Toasted bagel ($2.19)
My total for the breakfast sandwich: $11.76

Other possible toppings include: sausage, bacon, queso, salsa, mayonnaise, ketchup and various fruits and vegetables

Directions:

1. Crack the three eggs into a bowl
2. Whip the eggs in the bowl with either a fork or whisk (For a fluffier consistency, beat the eggs more softly)
3. Set the stove heat to medium and pour the whipped eggs into a pan to cook your omelet — which will be placed inside your sandwich
4. As the eggs cook, move the runny yolk so it touches the pan by opening up the omelet’s edges with your spatula
5. Finish thoroughly cooking your omelet by flipping the egg over, leaving the new underside on the stove for about a minute. Then remove from heat
6. Place the egg on the toasted bagel8. Add the sliced cheese, ham, barbeque sauce and any other desired toppings
7. Enjoy!
